Culinary Arts

Students are taught by chefs who have several years of experience in the restaurant industry. They begin by studying Kitchen Safety & Sanitation and progress through Recipes, Weights and Measures; Flavor and Nutrition; Knife Skills, Vegetable and Meat Fabrication; Stocks, Broths, Soups and Sauces; Cooking Methods, Techniques and Terms; International Cuisines. Students also learn through, internships, catering events, running a lunch cafe, and field trips to produce markets and restaurants.

About the School

CAAS is a small school school located in the heart of East Flatbush, NY. We envision the development of the whole child by partnering with all stakeholders to provide equal access to experiences in the arts and sciences that connect to the next stage or our students' lives. Our goal for College and Career readiness is evident in all the support we provide our students. We are part of the Career Readiness and Modern Youth Apprenticeship (CRMYA) pilot, which helps us support career readiness for all our students. We have courses that help our ninth and tenth graders explore their career interests and develop readiness skills. Our students can apply for apprenticeships in tech, finance, and business, which allows them to earn and learn while in high school.
